It is an outstanding product that can lend excellent flavour to any dish. Obtained by the cold pressing of IGP Piedmont hazelnuts, there are two different qualities depending on whether the hazelnuts are raw or roasted at the time of the pressing. The oil obtained from the raw hazelnuts maintains the organoleptic characteristics of the hazelnut and has a more delicate flavour that can give a touch of originality to simple and refined dishes, while the oil made from roasted hazelnuts has a more intense flavour that brings out the best of any dish. Both are perfect with raw fish and shellfish, as well as with raw meat, sliced steak and fillets. Mixed with vinegar the oil gives a unique flavour to any salad and is also excellent for seasoning risotti or to accompany soft cheeses.
