One of the special guests of the Italian tradition meets the great Italian pasta. Mushrooms are an exquisite and unpredictable food and their availability is influenced by climate condition. Because of that, they are not that easy to find, and the availability of this dish is very seasonal. It will be easy to have it in late summer or autumn. This kind of pasta is perfect seasoned only with butter or extra virgin olive oil and parmigiano reggiano. Delicious also with more elaborate seasonings, superb with butter, with garlic or enriched with olive oil flavoured with truffle. You can mix them with a delicate mushroom sauce that does not cover their taste.
